Why is it that these generated fortresses are so crazy?

A lot of players seal off their forts. Why shouldn't the NPCs do the same?

When I first started playing adventure mode I managed to survive long enough to visit a human inn... Things did not go so well. Wound up (trying to figure out the keys) taking a swing as the inn keeper, the guards turned on me and got killed, in my attempts to "talk" to them and end the fighting (still not sure if possible) I wound up killing several others in the inn. Wound up getting killed on the top floor in a room after killing several patrons and guards before they finally got me. That little hamlet is going to forever remember the day that crazy dwarf walked through the doors and tried to wipe out the village. What they will never know is the dwarf was screaming (in dwarfish): Armok damn it all! I only wanted to ask for directions!!! (chops another peasants head off)
