I demand a butcher option for all dwarfs that have a confusing symbol/color code / job in dwarf therapist! (or displease me in any other way.)

And make it an auto butcher option in case of nobles! (no need for an off switch)

But then there would be no need to make traps to kill off our own dwarfs!

The spear traps do!

We could use traffic designations to make dwarves enter one side of the butchery, and exit the other which is filled with traps. That way the butcher always gets butched.

Traffic designations only provides a hint of where not to go, but doesn't provide any means to define travel directions. You can probably use pressure plate controlled doors with state retaining logic so doors stay open/closed when leaving the plate:
- Entrance path to butchery is open at start.
- When Urist passes the entrance door a pressure plate triggers the door closing behind him and the exit path door opens.
- When Urist passes the exit door another pressure plate triggers the closing of the door behind and the opening of the door at the entrance.
