I totally know the feeling, playing normaly often feels too easy. The trick is to challenge yourself. If you want sieges to be a challenge, dont use drawbridges, use doors and traps. Try to embark on really dangerous areas or in places with important challenges. I had some serious fun playing a fortress with no access to metals because it forced me to build trades industry to get weapons and armor.
