Can you make dwarves pile things in a different direction?

I've noticed piles are usually more full at the northern edge and then more empty to the south.  Can i change that?  I have my booze pile overlapping my tavern but if i want to be assured of booze in the tavern i need to always place the tavern to the north and the booze pile to the south so the area within the tavern fills up first.  I don't want to have to make multiple booze piles early in the game.  This really limits my starting set up because i have to put everything on a north south axis. 

On a related note ; Does the graphic for booze effect whether its' "inside" the tavern or not?  If one square of pile was in the tavern would the entire pile be read by tavern guests and innkeeper?

You can't make dwarfs fill the southern portion of a single stockpile before they fill the northern portion.  You could achieve a similar effect by making multiple stockpiles with links set up to keep the southern pile(s) full.  You could also use a "quantum" stockpile technique to get many barrels on the same tile.

I strongly recommend against the QSP approach for barrels. The problem is that most booze barrels "belong" to stockpiles, and somehow linked stockpile->minecart->stockpile causes the barrels to be returned back to the source stockpile which they "belong" to. For some reason ordinary linked stockpiles (without a minecart and a third stockpile) doesn't result in that kind of horrible cycle.

There seems to be some influence based on item type. All the binned items in one of my stockpiles start in the north, and the furniture starts in the middle.

indeed, in my starting fort general stockpiles food barrels sit at upper north, piled from west, while nest boxes, bags, newly-produced beds and minecarts sit in the south, piled from the east.

You could make lots of two tile stockpiles for maximum efficiency

My dwarves always seem to start at the bottom in my furniture stockpile.

That makes sense sometimes, because they usually pile the bins and barrels from the upper side.
