Heresy grows from idleness.

Strangely enough, this is one of the few things I never seem to have problems with. All my dwarfs haul and harvest so I don't have any problem with a lack of jobs, at the expense of lower efficiency of course. And if there happens to be a peasant with absolutely nothing to do I tell him to start engraving and send him to help smooth my gigantic ever-growing crypt.

Two reasons.  The first is because in past fortresses I've seen dwarves get unhappy thoughts from "not enough work last season".  When I keep everyone busy, I don't see that any more.

The second is similar to the reason that some members of this forum want to have well-designed, perfectly symmetrical bedrooms.  Y'know, one of those deep psychological reasons.  In other words, because it just *bugs* me to see too many idle dwarves!

(This is not intended to disparage meticulous bedroom designers.  On the contrary, you have inspired me to more satisfying fortress deisgn.)

The way that I deal with the lazy buggers is to set the hauling mostly based on their job, eg all my miners haul refuse, trappers and fisherdwarves haul food (and cook/brew in the growing season).  all unskilled bearded ones get to detail stone, butcher, tan and process raw fish from day one to bump their stats a bit.  Its a bit of micromanagement to start with but once its in place you can easily tell whats going on by checking your units list.
 Also why would you need a legendary stone crafter? the amount of bone bolts and totems that my charges spit out gets em to leg. quick enough. (moods seem to throw up alot of bonecrafters for me as well).  If you want good obsidian swords take a skilled stone crafter with you, (I did in my present fortress and now have 50 s/swords + quality or greater, Ill never do it again, the lads have perfected the upper spine buster in the sparring room and I have gotten sick of coming through a goblin seige unscated only to have 3 fighters go down because I forgot to take their weapons away)

When I have too many idle, it's time to grow the military. When the military gets too big, it's time to kill some demons  ;)
