DF2014: Tower Cap and Fungiwood Growth

In old versions of dwarf fortress trees(both above and below ground) were one block tall

In df2014 trees(and woody shrooms) seem to be multi-tile monstrosities

if planning to do an underground tree farm do the rooms need to be multiple z-levels(5?) tall? can we still do the old 1 level tall? will we be stuck with young Tower-Caps and Fungiwoods if we do? the wiki doesn't seem to specify that, just that it needs muddied soil.

Then you are likely looking at the old version page on the wiki. From DF2014:Tree Farming:

A tree farm must be at least two z-levels tall (though additional z-levels can increase yield) with a soil or muddied stone floor.

While you'll get saplings in areas that are a single tile high, they'll eventually die, and will never mature into trees.
