you need to designate a zone to gather the clay (i)-(c) and a kiln with fuel
this makes a ceramic depending on the kind of clay you have, which can then be worked into various things at a craftdwarves workshop

Ceramic crafts, and all other ceramic products, are made at the kiln, not the crafts dwarfs workshop.
Only in the case of a clay musical instrument component will there be something that has to be assembled in a crafts dwarf shop.

You may also need to glaze your products, depending on the type of clay and what the object is - jugs and pots need it, other things it just adds value. This is also done at the kiln, using ash or cassiterite ore.

If you have Fire Clay it makes higher value stoneware and doesn't need a glaze.

Build your kiln with clay as the center tile.
Designate your only clay gather zone on that tile.
This way clay doesn't have to be hauled to the workshop.  It does not count as clutter, either.

Same trick works for sand & glass.
