I remember having tons of fun with Monster Rancher 1 and 2 for the PSX. Shuffling through all CDs I could find to get new monsters and whatnot. Pity their more recent games don't seem to have been released in the US.

There are plenty here that have already been mentioned, but I'll include an obscure one: Freakin' Funky Fuzzballs for DOS.  Last time I checked, I still have the world record speedrun in it.

Same developer, I enjoyed some Seven Cities of Gold but the anniversary edition didn't do it justice.

A couple of folks have mentioned Out of this World or Another World which was a brilliant game.  There was recently (within 10 years) a re-release with high-res graphics, and re-scanned background from the original paintings.

I also fondly remember the original Populous

As well as Mail Order Monsters.  Games like Monster Rancher (and maybe pokemon, I dont know?) are in the same vein as MOM, but they dont do all the things the original did as far as outfitting and strategic map.  Worth getting a C64 emulator for!

Gosh.. Armor Alley was a great one, so was Joust.
