WereAss pasture bloodbath - OK to eat the meat?

I had a human child wereass decimate all my pastured animals.  With a huge stroke of luck I had built a wall with a bridge door around the pasture.  So I was able to trap the wereass inside.  He died a couple seasons later of 'I assume' hunger.  I'm just curious if I had cooked the meat from the animals would it have transferred 'wereassism' to the dwarves?

Nah, nothing like that would occur. It's only the act of biting that afflicts victims with therianthropy. Consuming its saliva would do absolutely nothing.

Tame and trained animals can only provide meat when slaughtered; a dead tame or trained animal cannot be butchered. If your werebeast had killed wild (large, non-sentient) animals, then your dwarves would have automatically butchered them.
