Only just recently downloaded MW. How is it different from Vanilla or other mods?

It's big, in that most of the races are themselves a major mod.  With a few exceptions you can get started playing as you would in vanilla and begin to explore mix in new industries at your own pace.  Invaders carry steel (or mithril or metal-glass) so you want to eventually tech up past iron for sure. 

You might want to turn off diseases and secret !fun! Depending on your tolerance for random seeming deaths.  Many of the other Harder settings like farming are at least arguably better balanced than vanilla though.

Is there an ASCII version of the graphics?

Sure.

Because Masterwork has more uses for corpses (crematory), you might have to do more micromanaging of refuse piles to reduce horrifying thoughts.

No need, its an option of the GUI and included in the game.

how do you tell what race you're embarking as?

If you look at the neighbors list on the location selection screen, your race is the first selection.  I tend to only enable one race as fortable before I gen a world, so I don't need to deal with that.
