Is it possible to make flowers, leaves etc. usable for things like milling, brewing etc., in the same way that fruits are? Are they simply not collected by default because they don't have any of these uses, or is there some other thing making this happen? If it is possible to have dwarves harvest leaves/flowers/etc, will that affect the growth of fruits in any way?

Yes, it's possible. All you need to do is add the token [STOCKPILE_PLANT_GROWTH] to the material in question.

There's no way to link one growth to another. So you can harvest all the flowers, and there will still be a full crop of fruit. You can harvest all the leaves when they're green, and they'll all come back and be harvestable again come autumn when they change color.

Yep! Pineapples and bananas both work that way in the current version of Plant Fixes. Both are harvested.
