Do the cave river squares count towards the unsupported 7x7 limit for cave ins, or do they act as walls (with respect to this)?

They behave like unmined squares. So you can safely dig 6 squares out from the river on each side with no risk of cavein.

Ive had no issues with mining 6 tiles from the river. What you have to watch is  if the bank is missing a tile it counts as the 7th tile and causes collapses.

You can mine six tiles from the river, magma, or chasm safely. Trust me, I've mined out the whole mountain before, and it works. The trick is to watch the banks and not the wall. I've had trouble with that from time to time, and had to throw up an emergency support.
