I don't like using minecarts as there doesn't seem to be a way to have your dwarves intuitively use them. They have to take objects that have already been hauled to a workshop or a stockpile, unless I'm missing something.

That's not a problem if you have a small stockpile next to the trackstop that feeds the minecart; they'll take the ores to the stockpile, fill up the minecart and then send it on it's way. Unless I've misunderstood what you meant.
