How exactly do I use the tiletypes command in dfhack? I've tried everything I can think of and it doesn't do anything.

I am running DFHack 0.34.07-r1-Windows.

I am trying to set the paint, but it won't let me. What do?

Here's an 'I'm not at my computer and just trying to remember' example.
Try: paint shape wall
       Paint material rock (or maybe it's stone)

This should let you make natural walls.

That helps, but I'm still confused. How do I set light/darkness?

Better yet, is there documentation of it somewhere? It seems like a powerful tool but I have no idea how to use it.

It is very sparse on documentation; the best you'll find is in the DFhack thread. I've never tried to set the light/dark flags, so I can't help you there. All I can do is point you to here for about the best rundown on how you use it I know of.

for light and underground you can change the state like following

paint light 0
paint light 1

paint subterranean 0
paint subterranean 1
