What is the difference between purple evil regions and red/gray evil regions?
As far as I know, undead dwell in both. I also saw evil plants (sliver barb, glumprong, staring eyeball, wormy tendril) in both of them.

There is no difference in terms of evilness. As per the map legend on the wiki, sand deserts, Rocky Wastelands, and Badlands look gray and red instead of purple when evil like most biomes. Undead, various evil weather, and animation may be featured in any evil region, but there is no way to know what you will find from the world map.

Plant and animal types depend on the biome and on the evilness.

You can embark on an evil biome, and dead won't necessarily reanimate. But there is no way to test this without starting a fort or an adventurer there.

Be very wary of Terrifying biomes in this new version. Undead giant animals are are truly to be feared and respected in DF2014 and you can literally end up embarking right on top of one.
