I would presurize it but yes if your goal is to just blast them with water and fling them back out the entrance and over a cliff it will work.  you might want to ensure they are landing on something hard and preferably pointy down below instead of landing in several Z of water to ensure they either die or are not moveing much anymore but other than that.  I'd also layer another devensive setup behind it just in case it fails (out of water, lever puller is slow ect)  I've used the dwarven fire hose trap a few times.  not necessarily the best defense but its entertaining to watch in action.

hmm you know I should go try and build one of those minecart water cannons someone came up with a while back and see if they still work in the current version.

If their body is super hot fixed temp, can't they boil the water before it makes obsidian and thus survive? Or is it too fast for that to happen?

I think if you drop water on magma, it'will not touch the creature at all, just turn the magma into obsidian. Not sure if the magma needs to be 7/7 for that.
Don't do it the other way around. Dropping magma in water is not a very reliable method of casting obsidian.
