Title. I've been wanting to embark on a flat plain and create a series of trenches manned (dwarfed?) by my military while the entrances to the fort itself are located farther back into the trench system. I just dont know how to go about creating it. I have fun thinking this stuff up, I just lack the skill to go about creating it in game without outside help.

I did this! I played a kobold fortress where I couldn't build walls.

Your biggest issue will be enemy archers. You have no cover from them on the surface. I suggest forcing them into the trenches, and creating traps, pitfalls, and blind spots you can fire or attack from for defense.

Start with something simple, like a two ring tiered defense system. Each trench should be 1-z deep and perhaps 2-3 z across to try and keep critters from jumping over them too easily. You will have to cut down all the trees in the area (and perhaps pave over the area) to keep them from growing & spoiling your defense system. Use tunnels to connect your trenches to each other. In the central part of your defenses, wholly separate from your fort proper, create (underground of course) your central command bunker where your military hangs out and can access the trenches via the tunnels.

Remove the ramps from the trenches to force enemies to have to climb down or jump in.

Fill the tunnels with traps and murder-holes (fortifications) that your dwarves can shoot at passing enemies from behind. Bonus points for making the tunnel system very winding & maze-like to make it harder for an enemy to get to the center. Best security solution would be to have only a single viable tunnel route, but that would sacrifice speed of deployment unless you regularly have patrols out in the trenches.

There was a great fort in the community/stories section that was all about this.  I dont remember it lasting terribly long but if you want some nice pictures and a decent amount of story I would do some searching.

If you want to go a step further you could incorporate siege engines into your plans. Just make sure the ballistas do(n't) catch your dwarves, they can suffer from friendly fire.
