Even last version most civs would have the same colour eyes, hair and skin.
I suppose if you want to simplify scientific testing, you should edit the raws for less variations, or simply name them as numbers. For example hair:

The gray at "TL_COLOR_MODIFIER" at the end I guess is for aging, so older dwarfves start having strands of grey hairs at round 80 years of age. Dunno if even older dwarves go completely gray, but probably.

In one of the old versions I edited the skin raws so dwarves would have skin tones named after rocks. Granite, obsidian, microline, etc.

Yeah guys, let me post the particulars of mine since we are doing !!SCIENCE!!.

This was a world generated to 300 years. All of these dwarves are from the same civ, and have varying shades of brown hair and Heliotrope Eyes. This includes all 100-ish migrants.

All of these dwarves are from the cold or freezing regions of the world.

::EDIT::
It might be worth it open up legends viewer and check the first dwarves for each civ. Perhaps one family line, and therefore their traits, can become dominant?

Honestly I don't believe there is any genetics implemented yet, so there's no place for true eugenics (sadly) and abhorrent experiments (even more sadly), but I wish I'm wrong.

In my 550 years old world, dwarves are no more.

The dwarfs in my fortress, though, have brown skin, jade eyes and taupe gre/ cleans shaven hair.

Even the children have grey hair.

The Khaleesi has been busy, it seems.
