Wait no, I'm dumb. I just realized I could simply dfhack all the rest of the water out right some time after the freezing occurred but before support ice occurred.

I just did that, and officially: it will stay suspended until you dig ANYWHERE on the map. Then it will suddenly cave in.   :D  (presumably also building or deconstructing constructions or some other things would do it too)

So still a manual trigger, but a damn easy and safe one!



edit: Somebody needs to painstakingly build a giant orbital ice bombardment system now. Cave-in's are instant! no predicting where they will be when the magma falls on them, etc. Just laser sharp and fast sniping, lol. It would require some dude to be digging away diligently in, say, an obsidian farm just for the sake of digging as a means of "arming" the trap. Then as soon as you cast ice, within a few ticks the next time he mines something, instadeath. You could probably concoct some way of using a forbidden door or whatever as a means of overseer-speed target designation too.
