Now that they can breed - can you do anything with them other than butcher and tan them? (and make bolts from their bones)  

I'd ask about dwarven cavalry, but I thought horses were too tall for dwarves to be comfortable with ...

Dwarven calvary usually uses mountain ponies, small, shaggy beasts that build up steam like locomotives. I don't know what sort of horses the game uses, but I imagine it's just 'horse', big, tall, stupid.

So far, the ones I've owned have had two purposes, as a pet, and as a main course. Same goes for the mules. I'm sure there's bloat planned for them, though.

some of my dwarves seem to be a bit upset at (seeing?) some of the horses getting gutted and minced.

guess i can't just set them to slaughter nonstop?
