Islands are a landscape I've never been able to generate in DF, and was wondering if anyone else has had any luck on this? Obviously I've seen the ones you can generate by just picking an island world, but what I'm really looking for is a piece of land small enough that I can see the shore in every direction on the embark. Do such embarks exist? If so, how can I generate one?

If you are using the in-game standard world-gen, its completely random.

If you are using the in-game advanced world-gen, try increasing the value on the minimum sea/oceans line (it's something like that, an ocean specific equivalent of the minimum mountain peaks/volcanoes line) - but, even this is largely random, and can't be helped.

I;ve never managed an embark with water on all sides I'm afraid, but I recommend downloading PerfectWorld utility. It basically lets you design the world you want, or randomly generate a world for you to edit - It's the most control you can have over the DF world-gen I've ever seen, and you can modify the values like you do in advanced world-gen.
If you do try PerfectWorld, i recommend you type 'PerfectWorld' into the forum search bar, and go to the PerfectWorld thread.
I've also written a guide for using it, it's in the thread 'DF terrain boring and irrelevant?', on the second page.

The best I've managed is to get water on three sides, kind of... It was more like 2 and a 1/2 or 1/3 sides.. Why do you want to generate an island with 4 sides being water anyway?

You can do it.. but it would be time consuming to find one small enough.

You should be able to do it in advanced worldgen by setting your elevation weightings just so, with a small mesh size, and a lot of ocean required.

You'd probably have to let dwarven civs spawn in non-mountain squares though, as you'd have a hard time genning mountains with those settings.

A great idea would be to generate a tiny island next to a coastline, preferably with a volcano present. You would embark upon the island completely surrounded by water, but caravans, migrants, and sieges would spawn on the coastline. Has anyone been able to generate one of those?

Given current events, I've altered my profile pic and I'm sorry it took so long to fix. If you find the old one on any of my accounts elsewhere on the internet, let me know by message (along with the specific site) and I'll fix. Can't link the revised avatar for some reason.

I think it's possible to get a small enough island just with the basic worldgen, but you need luck, and you do need to spend some time searching for it, since they don't show up on the zoomed-out version of the world map.

At the very least, I'm pretty certain I've found islands that spread over only 2 16x16 views, without using advanced world gen, or even checking the whole map.

This is harder to find than you would think. Even if you find a 7x7 size island you still need a 9x9 embark to make it have sea on all sides when you actually embark.

Yea, this is more than likely going to be the biggest issue. I managed to get an island the other day that was about 5x5, but it was on the border, so I couldn't make it work. However, the link backora900 posted shows promise.
