how do I make the animals go to the pasture?

So I made a 10x10 pasture(n) for the animals but they all are hanging out in the fortress and my water buffalo just died because of it. So how do I make my animals go to the pasture?

Type i and move the mouse to your pasture, then Type N and choose the animals you want to graze there with +/- keys and return. When done, press esc and your dwarfs will move the animals to the pasture.

My animals always eat the grass in my pasture until it's nothing but dirt, then I have to make a new one and they eat all that, too. Does anybody have any advice? Am I doing it wrong somehow?

For some animals the pasture has to be quite large (yaks), others only need a small one (sheep or goats). The larger animal should have their own large pasture.
