An easy way to take away all prisoner-held armor and clothing is via the mass designation tool. Designate an area with d-b-c to claim and d-b-d to dump an area (i.e. your animal stockpile, filled with caged prisoners). An easier way to selectively disarm prisoners is to designate mass forbid d-b-f and mass dump d-b-d on all of the caged prisoner stockpile. You will need a bookkeeper for this. Press z and go to the stocks screen. Find an item category with items marked F and D. Press f to remove the F for those items, but don't remove the D. This will unforbid them, but they will remain marked for dumping. When you exit the stocks screen, the dwarves will haul those items from the cages and drop them into the garbage dump. When the dwarves have finished the hauling tasks, designate a mass claim d-b-c and mass undump d-b-D on the same area as earlier to remove the forbid and dump designations from the cages and the rest of the contents.
This method can be used to confiscate specific items from caged prisoners, like weapons, armor or bags containing stolen property or kidnapped children. It can be more useful to just remove their weapons if you want to use your caged prisoners for target practice; they will be more durable with their clothes and armor equipped, but not very dangerous without their weapons.

Just have a large military,survivors of each battle will get strong quickly,Make sure to put these guys in best available armour and dont be afraid to throw them into fights unless there are too many archers

You will get a few who will survive every fight and become elite pretty easily without all these unnecessary split squads into w/e

You will lose a lot of dwarfs but theres always more migrants to draft

If you want to set up a working military fast bring a drill sergeant (or two) at embark with skills in one of the weapons, dodging, armor use and teacher. If you bring two instructors, put points into teacher and student, and divide the military skills among them: one weapon skills each (hammer and axe), dodging, armor, and shield user. Fighter skill levels up fast, so don't bother with it, but dodging and armor is slow and very important for survival.

Then as soon as you start building the base set up a 2 dwarf squad and let them train while you are waiting for the migrants to show up. They will teach each other their respective skills fast, and by the second year you can set up 2 squads with 1 teacher and 2 rookies.

Teaching Skill, Teaching Skill, Teaching Skill.

Small squads make the game more likely to have dwarves spar with eachother. Later in the game, pluck some dwarves (3-5) with high teaching skill out of the batch and have your Drill Sergeant train them. Use these dwarves to create a one-on-one training system. Cycle out with danger rooms and you'll have an army of dwarves that could massacre goblins naked.

Give them silver crossbows and have them well trained in Hammerdwarf skill. You'll have some Bad MotherUrists.

Coat them in steel and a dragon might think twice about messing with you.

I suspect anything involving danger rooms wouldn't fall within the realm of "legit" as per the OP's question, but there's no doubt they'll get you legendary dwarves.

Teaching skill is worth mentioning though.  A good teacher makes a big difference in the effectiveness of demonstrations for larger squads.  I believe the difference between novice and legendary teacher is something like 3-5x as effective.  If you've got some veterans with high teaching skill, rotating them out of combat squads to serve as leaders in training squads is something worth trying.

If you're going to make 1-on-1 training squads though, it's not going to matter too much.  I don't think teacher skill influences sparring at all, I'm pretty sure it just grants combat experience at some slightly reduced value.  If that's true, then it would only involve the skills used directly in the sparring.
