Using DF Companion to make multiracial forts

I was reading the Nist Akath thread and I was wondering how you use DF Companion to take control of other races. Anyone got a line on how to do this exactly? How did the Captain keep his goblin as a unit without turning him into a dwarf? The same question for the titan. Any help would be appreciated.

I remember reading somewhere that you enable humans/goblins/etc. as pets, bring a few with you to your fortress, and then use the Companion to remove the pet tag. It had problems, though, because many tasks were still impossible (they hunted, I believe, but couldn't haul - or it might have been the other way around, for all I know).
If someone has found a better way to do this, then ignore me.

You can just switch the race of one of your dwarves, then assign a new name.

Can't do that.

I've tried that by swapping a dwarf cook to an elf cook. He didn't cook.
