i have designed a kind of cool dwathtrap involving my entrance a whole load of verticle bars and ye olde spikes of death but im just wondering..... can trolls rip apart my iron bars?

Yep.  Iron bars are buildings, and thus are susceptible to building destroyers.

Fortifications and walls, on the other hand, are safe.

The only things destroyers can't bust through are constructions (of any kind) and channels.

Will trolls destroy things like hatch covers instead of walking over them? Will they ever destroy anything directly underneath them?

when i read this thread title i immediately thought it was going to be some joke starting like "so this troll walks into a bar...."

Also to answer the above poster, at the very least trolls seem to walk over bridges without feeling the urge to troll-smash it underfoot. I would suspect hatch covers may work similarly to doors tho.

I imagined a troll running down a hallway, then smacking into some bars and splitting into four pieces.

You could use raisebridges. They can block a path when raised, and I think they can't be destroyed by creatures.
