IIRC, lard is actually BETTER for you than other fats, because you don't use nearly as much to cook with,

Why would you use less?

Its a bit more concentrated than other oils, and it is saturated instead of unsaturated fats. As far as I remember, unsaturated fats stick together more than saturated ones, and clog arteries while saturated fats just slide on through you.

Unsaturated fats break down more easily, saturated will stick in your arteries.

Heard my name in here, and I just thought I'd add my two cents. We use a ton of cilantro in my house because it works to make everything that is savory better.  For baking things like cookies, I prefer to add excitement by loading one cookie with extra salt.

In short, good spices are a great way to make your cooking taste better.

I should warn people who want to cook with a lot of Cilantro that some people have a "Mutation" that makes it taste like soap.
