It's be super neat if forest-fires sometimes make charcoal/ashes that can be collected?

They could turn the trees to "charred trees" which can be cut down by woodcutters, and it turns them into ashes, with a small chance for some kind of coal?

Charcoal is created when wood is burned very slowly with very little oxygen. It's a very delicate and labor-intensive process. You can't just burn something and expect to get more burnable material out of it.

Collecting the ashes would be neat though. It might work in the next release with the reworked trees.

Charcoal can be created in some rare circumstances during wildfires (so it'd have to be kinda rare-ish)

They already have them, they are usually called "dragon attacks" though.
