Garbage zone vs Pile

I was wondering why use piles anyway, while you can have 1x1 garbage zones for everything?

Dwarfs take garbage to the nearest garbage dump. Dwarfs take items to the appropriate stockpile.

Running a fortress on nothing but garbage dumps means you would have to find a way to tell the dwarfs WHICH garbage dump you want to dump into. Good luck with that.

Dumps require a 1z level fall.

Dumps forbid everything. Which is potentially as tedious as not stockpiling anything.

Dumps are exploity.

They can be done without a fall, but yeah, shouldn't use them for everything.

I usually just have one, and only use it for clearing out excess stone or wood and getting rid of crappy clothing. Using garbage zones to get your dwarves to move tons of blocks up to a construction area is useful, though.
