Yes, they do want specific metals sometimes.  I once had plenty of metal bars but my moody dwarf wouldn't touch it.  I looked in the dwarf's profile and noticed that he likes Steel, which I didn't have at the moment.  So I made some steel bars and he grabbed them immediately.

Check your dwarves' profiles if they seem to be ignoring materials.  Their personal preferences can cause them to want a specific item.

Actually there was once a time when they could want thread or skins. Fortunately this was removed, because it was incredibly, incredibly annoying.
