capturing animals

is there any way I could capture an animal to tame and train

Im trying to figure out If I can capture wolves or something like that and train as war/hunting dogs.

You can capture them if they get caught in a cage trap. Not all animals can be tamed (and only dogs can be trained as war animals unless you edit the raws), but wolves can be tamed, yes  :)

Do wolves have puppies?  Are the puppies trainable?

I think all large animals can have babies. No puppies are ever trainable, the adult versions are answered above.

To remove floors... If it's a "natural" floor, channel it out from the designation menu (press d, then h). If it's a constructed floor, use the "remove construction" designation (press d, then n, IIRC). Removing constructions takes a long time, though.

And for engravings, smooth the stone then engrave the smoothed surface. Similarly, fortifications require you to smooth the surface beforehand.
