Hammers are definitely the way to go.  Edged weapons just end up resulting in exponential zombies.  Atom-smashing and burning corpses works well after the hammerdwarves (or hammer weapon traps) knock them out.
Depends what you're fighting. If you've got a way to quickly neutralize them once they're gone (like a 50/50 evil/neutral embark) then edged all the way.
In a 100% evil reanimating biome, Yaks, ravens, dogs or any quadrupedal/avians in general you're better off killing with edged weapons to reduce their effective mass (i.e. the thing trying to bite your face off). Humanoid creatures like humans, mandrills, kobolds or Dwarves - those are the ones you want hammerdwarves for. While a whole corpse is a great deal more deadly still, it can be considerably harder to dispose of the corpse if there's 3 reanimating body parts for every corpse slain.

Yea I think I need to reembark. Right now my problems are the livestock I brought and the fact that only one dwarf has any military skills.
