telling what resource to use when creating items

help! I have not played in awhile and can hardly remember anything.

I want my dwarf to cut some stones into blocks. How do I tell them to cut only my diorite stones (as opposed to my claystone)

I cannot find it on the wiki for workshops or anything

* create a small stockpile that accepts only diorite near a mason shop
* make sure it has at least one wheelbarrow assigned, which is default, and that you craft a wheelbarrow
* query the stockpile and set it to "give" to the mason

now they are linked and mason will work only with those stones.

Another.. err.. cheatier way, but much faster in most cases, especially if you have tons of idle labor is to set a dump zone right beside your masons shop. From your stocks menu dump all your diorite (you did train your book keeper.. right?). After a flurry of activity mass unforbid the dumped stones. Now set your mason to do blocks.  His first stone will be whatever is closest to him at the time but after that hell use the pile of close stone.

You can probably integrate smakes method and make the dump zone a linked stockpile too. Now of course, minecarts are also an option to accomplish the same thing.
