Its been said, weaponise it.
Infect a bunch of disposable dwarves, train them up and contain them (with a method of releasing them upon your enemies).  any invaders unlucky enough to be around on a full moon will have a suprise in store.

And even if you don't have any enemies conveniently hanging around on the full moon, werecreatures regenerate to perfect health every time they transform. I'm sure you see the military value in having your soldiers regrow lost limbs and organs on a monthly basis.

By brutally beating up your Dwarves in animal form, you can effectively train endurance and willpower to the point where they're practically indestructible. A were-creature in humanoid form is a very powerful humanoid.
