In the process of digging out my farms in a soil layer, I see shrubs growing. I think to myself, OK, maybe I inadvertently breached the caverns, so I have someone gather the shrubs. But after they gather them, I notice they all produce dimple cup, plump helmets, and all those other kinds of plants. Is this normal?

It's not normal, no, but there was a thread somewhere not long ago about someone saying that they also got underground crops growing in their soil layers before they breached the caverns.
I think it turned out that the had a cave system somewhere on his embark or near to it.

I read your post, I just did not understand if the crops growing was normal.

It's normal for underground shrubs to grow in soil layers. It's not normal for this to happen before a cavern is breached. That happens only under a few special circumstances as already described.

I think the question is actually, "are the shrubs that grow in the caverns the same ones dwarves farm?" Yes. The only underground shrubs in the game are the ones you can farm.
