had 24 dwarves, got 43 on the next wave. I had maybe a few thousand total fortress wealth and I'm on top of a damn volcano (literally, I've capped it off and build rooms hanging off it) so I can pull a lever to a noble's room which will disengage the entire thing from the rest of the fortress. Gravity generally takes over from there and I understand it's a long way down.

You need Therapist for this game. It is not an optional communiuty utility despite what others may tell you. You literally cannot manage 200 dwarves using the ingame interface unless you're one of those gifted autistic people.
Playing on a Mac I've never had access to Therapist and can conclude you do not need it. I have a text file listing the amount of professions I think I need (e.g. miner = 5, mason = 4, carpenter = 2, glassmaker = 25...). Then I use the custom job titles to mark all my dwarves and disable all the other jobs from that dwarf. That said I don't generally look at the pre-existing skills a dwarf may have but their personality when deciding what profession they'll pick up.
