I think they're saying that the skin will reanimate and try to kill you, and that is why you don't bring them for meat.

Edit: Also, this is an island. That means the only people who come will be the dwarves, ever.

Isn't there a tag you can give the other civs so they will always find their way to your fortress? That would probably be a good idea for variety, else all you will have to fight is wildlife and forgotten beasts. I'm sure there's a mod for pirates or viking sea-raiders somewhere out there.

e: Also, the greatest threat on a glacier is starvation or dehydration. In more temperate biomes you can always fall back on wild plants for sustenance but you don't have that crutch on a glacier. If you want metal for a military I recommend setting up magma workshops soon, because you probably can't afford to cut into your precious stocks of wood for fuel. Wood should be used for things like pumps, beds, and critically, bins. A fortress without bins is not very efficient, you'll have to compensate with much larger stockpiles depending on the item. Finding a place to put all your mugs without using the quantum stockpile exploit is painful, and hauling each individual item to the depot is rather tedious. Remember you can set how many bins you want a stockpile to use with (q).

But skin and skelletons are the best training buddies for marksdwarfs. Just place them next to some fortifications and let your dwarfs fire away at the repeatedly-reanimating target. A single bolt usually does them in.
