So, I've started a new fortress to practise breaching aquifers, and after some tries, everything went smoothly, untill I dug the second layer into my 'plug', where suddenly the water was present again, while I am quite sure I have made more than 2 levels of earth fall into the gap. Here are some screens for your help:
The upper level, nothing to note here.

One level below that

Another level below. As you can see, here the earth entered the water. I can make a downstair into the earth.

One level down everything seems well too, I am perfectly able to dig an up/down stair

When I try to make an up/down stair a level below, I notice this is suddenly damp stone. When the stair is digged, it's clear this is 7/7 water.

And just as I thought I couldn't do anything here, one level below, obviously hindered by the water.


I'm clueless, any help would be much appreciated!

If I'm understanding you correctly, you've got a multi-layer aquifer. If you want to use the cave in method, you've got to start with a bigger square, so you can do anther cave in through the lower layer. And there might be another level under it. I've read of aquifers 6 or more layers deep.

Try the two-slit method linked to from the bottom of the aquifer wiki page. It will go through any depth of aquifer without requiring advance knowledge of how deep it is.

Well, the thing that confuses me is that even though 2 z-levels went down into the aquifer, I could just dig 1  level down and then I hit water.
