It's so damn easy that I've gone and done it FOR YOU. And for anyone else who wants it.

Here. All of the creature raws that need to be replaced to remove all of the animal people, excluding the subterranian civilizations and tigermen.

The whole creature variation system kind of exists for this reason. You don't have to change every individual animal person entry, just open c_variation_default and add this at the bottom of both [CREATURE_VARIATION:ANIMAL_PERSON] and [CREATURE_VARIATION:ANIMAL_PERSON_LEGLESS].
