About to set up a proper hospital and I'm attempting to select a master as the CMD, but he wont show up in the noble select menu. However I know that I have a vamp in the fort, could it be I can't select him because of that?

I do know that vampires fake their names.  You can't find them in the list on dwarf therapist for that reason, because it shows their real name.

There is a chance that the noble screen is bugged and shows the real name while the "u" menu shows the fake one? I do know 100% for sure they can become nobles, because one was a mayor once.  So if it is an issue, it is probably something about their weird made up names and a bug or some such, rather than them not being allowed to be nobles (which would be silly and even an odder bug)

Also, 3 of the 6 or so vampires I have ever had had great doctor skills.  Possibly a coincidence, but an awfully odd one if so.

Hmmmm well the problem now is, due to him lying about his job, I can't obviously target the diagnosticians, as he doesn't come up in the "u" menu either, as you said. So now I'm reduced to either hoping someone witnesses the next attack, or I build bedrooms for everyone (long task, kept getting massive waves of migrants, lots of kids) and just sit there watching for when someone gets eaten.

Your diagnostician won't come up in a noble selection or the 'u' menu.  What makes you believe that you have a master diagnostician?  Are you looking at him right now via 'v'?

No, I'm looking through Dwarf Therapist (how I decide who does what) and it also lists his profession as "Diagnostician". As such, because I can't find him leads me to believe he is the vamp, but because I can't actually find him by profession (due to not being listed), kinda makes it hard in a 160 Dwarf strong fort =\ any tips would be appreciated to root him out.

Attempt to select a CMD the first option should be the most qualified candidate, if he's a master diagnostician but his name isn't the same as the one on DT then he's a vampire.

Memorial slabs for people drained of blood list the real name of a vampire so there's another way to check as well.

If the Master Diagnostician's name matches the one that comes up on the slab, then you can be certain that it isn't just a glitch of some sort.

this. I once tried to find a pretty good hunter to put in a marksdwarf squad. I had found him in therapist, but he didn't show up anywhere in the game. Ten I checked his previous allegiances. A list about the size of the whole screen came up. Looked him up later in legends. 4000 kills, some animals even(well, he was pretending to be a hunter). He was quarantined.

The catch however is this. I open up "n"obles to select the CMD, and yes, the most qualified is listed, but thats my level 10 diagnoser (cant remember the actual rank) and the vamp (pretty clear what he is now  ) isnt listed at all as a diagnoser. Nothing. I tried the slab thing, then tried to match it up in the "u"nits list, still nothing (owing to the fact that slabs = real name, while "u"nits is still the false name). I just found it very weird that if a vamp is trying to imitate said skills, it would at least come up as a diagnoser. However, looking through the "u"nits list specifically for the profession name, I only turned up my level 10 guy. Would be much nicer if somewhere along these bug fixes Toady worked in reactions to seeing a vamp attack, rather than "meh, he'll be fine", instead something like "Hey, this guy's having the life sucked out of him, maybe the militia could help?". Something along those lines.

It's likely that the master diagnoser DT is showing you isn't a dwarf you control-- probably a ghost or something.  Check for the dwarf on the other section of the 'u' list.
