As far as I know, and I didn't see any posts that recent versions changed that, he will use his woodcutting skill to replace axedwarf skill. He will also gain axedwarf skill if he gets into a fight, so that might confuse you.
He will not use woodcutter skill to replace fighting/dodging/striking/kicking/shielding/etc skills.
You need to disable woodcutting first, because woodcutting labour has it's own 'uniform' that interferes with assigning military equipment.

You should also be wary of vampires. In my experience, the most awesomely skilled dwarves just might be ancient bloodsuckers.

I've had highly skilled migrants too, guess the flood of peasants has been fixed.
