So I have a decent fortress. 110 drunks dwarfs, more food then what I know what to do with, etc etc. However, I keep hearing about magma smelters! I have yet to figure out how to build these things. Do I need to dig down to the magma layers first, or can I use DFHack to supply the magma.

You could use DFHack to create some magma, but unless you actually discover a magma-related map feature you won't actually be able to build any magma smelters.
If you're using the latest (unreleased) build, though, the "feature" command will let you discover the magma sea without actually revealing it.

Its an uncovered workshop, that will ONLY show up in the list of workshops, once you find a Magma Pool.  Most default embarks have a Magma Pool.  Keep digging down, and when you hit warm rock, your close, do some very careful channeling at that point.  Once you pop the discovery open, you're miners will send you a msg and DF will pause.  The Magma Pool will show up, like an uncovered cavern.  Cept with this you get the added bonus of immediately learning how to build those sweet, Magma Workshops, like the Smelter.  Which need flowing Magma in a channel under them to work properly.
