The best thing would be testing with sufficient trials, 1v1 combat, across all skill levels, across all weapon types, across important species. That would give you the actual answer of which material is better in which situation. The main problem with that is it's so tedious nobody will do it without getting paid :D

I'm pretty sure that Iron has been proven superior to Bronze in .34.xx. Too tired to test tonight, maybe tomorrow. In either case, the difference is so small that it won't matter for most applications; a *Bronze Longsword* would probably be equal to or better than, say, a -Iron Longsword-, etc.

Only dwarves work steel, and dwarves don't have cities with shops. So no, not yet.

You can find steel in some cases, but it basically only exists in things like the lairs of werecritters that are very close to a mountainhome, so they raided that mountainhome to get steel stuff, or else in a bandit lair near a mountainhome, or a keep/dungeon from a human town with trading relations to a nearby mountainhome, etc. 

Steel's pretty rare, so you can't be too choosy, though.
