Couldn't you use a pump to pump water over the last edge?

Pumps require a bit more engineering.  Bucket brigade requires only migrants and a high population cap.

On a related note of moat design, how wide should they be? I've seen a Minotaur break down a door without even being next to it (a solid row of empty tiles between it & the door), so if you dig a moat that's only 1 tile wide, could (some) building destroyers reach over the gap & batter doors down?

Building destroyers have a range of 2.  There's a 5x5 area around your door that they can stand in and destroy it.  Safety dictates 2+ wide, prudence demands 4-5, dwarves demand you use bridges instead of doors.

If your following my little list to do, yes, you can make pumps instead of Floodgates, and completely skip the last channel bit. I personally didn't say anything because it's less !!fun!! that way (Not that there's much !!fun!! involved here, but every little bit counts) and, I'm assuming the OP doesn't quuiiiite know enough about dwarven engineering to actually get pumps working. I know I haven't, but I have used this method to make a moat, and a river fed irrigation system, with 0 casualties. ^.^
