Sometimes Dorfs will only butcher dead corpses if they're in refuse/corpse stockpiles, and if the corpse/refuse is outside, be sure to have the (o)rders for (r)efuse set to gather corpses from the outside.

Duck can be butchered. It's small and produces little meat, but can be butchered, producing a skull at least.

Tame ducks can be slaughtered.  They produce only a skull and nothing else when butchered, but they can be butchered because they're tame.  Wild ducks cannot be butchered, because a butcher won't touch a wild animal that's too small to produce anything but a skull.

Nope.  Hunters will happily kill ducks, cavies, and rabbits, all of which are too small to be butchered.
