Water freezes really fast.

Maybe too fast. We're talking like, it's being frozen in the process of being pumped out into exposed air, fast.

Hmm, I wonder if you could make a tower out of ice using this method  :)

I can imagine making a really tall pumping tower and coating it in ice using this, kind of like the flowing wax on burning candles. However, wouldn't the ice stop up the flow?

Normally, moving water is harder to freeze.  This is something the Dwarf Fortress universe doesn't model, though (at least, not at the moment).

Unlike humans, dwarves require alcohol. Perhaps this is not just alcoholism, but a deeper biological process - perhaps the dwarves require alcohol just like we require, say, vitamin B? Given that they move a lot slower without it, it's not far-fetched to think it's involved in their metabolic processes. And could not those metabolic processes generate some sort of anti-freeze?   :D

By the way, if water freezes this fast, how about a water cannon that spurts out a quick jet of high-pressure water that freezes into an ice spear in the air and skewers the goblins?

Or we could use pumps and just crush them with large blocks of ice.  :)
