I had a Swordsdwarf who got accidentally marked as Unarmed while I was shuffling around weapon skills at some point; when he sparred enough to gain Elite Wrestler status I noticed it and reassigned him a sword. Now he's gotten up to Legendary Swordsdwarf and is still at Master Wrestler, but his profession didn't change from Elite Wrestler to Swordmaster when his sword skills got better than his wrestling skills again, nor did it become Champion when he reached Legendary in swords...

One they get to the elite level, I think it locks them into their professions right now, and you didn't used to be able to change their preferences once they got there.  It probably comes from that.

Just one question: when it comes to wrestling - does it still count as a "dodging" skill even if your dwarf uses shield/armor/weapon?

Yeah, dodging always uses the unarmed skill.  It should all be teased apart, which is combat arcish.
