Moss growing in dry soil after a cavern breach.

 I've been putting up with this and I'm just wondering is this a bug or something because I find it annoying.

Nope, underground grass (moss) will start to grow on exposed soil after the caverns are breached. You can stop this by placing floors, roads, or if you are feeling cheap, empty farm plots on those spaces you don't want them to grow in.

It isn't a bug. Moss is supposed to grow on muddy underground stone and any underground soil once the cavern is breached. You can stop moss from growing in your corridors by paving over them, and prevent it from blocking your sand and/or clay collection zones by either making those zones next to an appropriate wall rather than a floor, or by setting a grazer animal to pasture in them to keep at least one of their tiles clear.
