Yerba Mate - making & drinking it

A while back Nistenf(one of our number!) told me about Mate, I yesterday got my gourd and Mate.

I have tried twice to make it so far, I tip the Mate to the side, I put cold water in to stop the hot water scolding it, I then tip hot water in.
I have tried this with boiling water (with cold water in the bottom to counteract it) and with warm water. Both times the Mate becomes very bitter within 5 minutes and extremly strong tasting!
I would prefer to reduce the strength, any ideas on this? I'm thinking of using less Mate per Gourd but I'm not sure if that would work.

I love mate too. Got my gourd last year, before that I used a coffee press.

On the strenght thing: have you tried lacing it with sugar or saccharine?
