Didn't think they grew on metal.

I've discovered that constructed floor tiles can be muddied and farmed upon. This includes all types of floor tiles. I muddied a steel floor and it was listed as farmable. Didn't think farming in rust was intended  :p

I've seen lichen grow on clean metal sheets in real life, so perhaps the dwarven subterranean foods are extremely hardy and only need a bit of mud and moisture.

Lichens are really sort of fascinating, they will grow on damn near anything and can survive some pretty extreme environments - including outer space (at least for a time).

back on topic - I don't really see the problem with growing plants on metal... rather, I don't see how it is any different from growing them on a smoothed bare stone floor. I was under the impression it was the mud that mattered and that was what they grew in.

Unless rust counts as mud, putting water on metal plates shouldn't make mud.

I was more of the impression that the water contained the mud, and as it dries the mud is left behind.

You could argue the same thing, saying that adding water to a clean stone floor wouldn't produce any mud either.
