How do you train security on someone that has no security in the first place?
Also what archetypes have security once you recruit them?

You'll have to find someone with security. Once you do, and they have at least level 2 security, you can have them teach others. You can also bring others along in a squad to watch the person with security pick some locks; they'll eventually learn the skill from observation.

Security is a pretty rare skill. You can find it on many prisoners (if you break them out) and on professional thieves in the wild. Professional thieves are disguised; they show up as socialites, art critics, things like that. You won't know them until you start dating them or recruiting them, and they show up with a different class than they originally appeared to be, along with high skill in stealth and security. Try wandering around the crack house for awhile and look for strange rare encounters, like sculptors or journalists, then recruit them if possible.

Alternatively, there's a small chance it can just randomly appear as a skill on anyone. But it's probably a rare skill, similar to heavy weapons or submachine guns, where very few people who don't automatically get the skill start with it.

Finally, some of the options at the beginning of the game will give your founder security skill.

Finding security in the latest release may be quite tough: apart from the random skills, you'll find security only on

* Mercenaries (who aren't easy to recruit)
* Hardened Veterans (even harder to recruit)
* A certain, quite rare type of prisoner (not hard to get, but you'll probably have to release a lot of unwanted prisoners as well)
* Thieves (who, like Jon said, are disguised)

However, this gets better in the trunk (bleeding edge development version) where a locksmith NPC has been added.
